Mediterranean Stuffed Sweet Potatoes

Serves 4
- 4 medium sweet potatoes
- 15 oz can chickpeas, drained and rinsed
- ½ tbsp olive oil
- ½ tsp cumin
- ½ tsp coriander
- ½ tsp cinnamon
- ½ tsp paprika
- 1 pinch sea salt
Garlic herb sauce
- ¼ cup hummus
- 1 tbsp lemon juice
- ¾- 1 tbsp dried dill
- 3 cloves garlic, minced
- Water (used to thin sauce)
Instructions
- 1. Preheat oven to 400 degrees. Line a large baking sheet with foil.
- 2. Wash potatoes and cut in half length wise.
- 3. Toss drained and rinsed chickpeas with olive oil, cumin, coriander, cinnamon, paprika, and sea salt. Place on foil lined baking sheet.
- 4. Rub sweet potatoes with a dash of olive oil and place face down on the same baking sheet. Roast in oven for roughly 25 minutes or until sweet potatoes are tender and chickpeas are golden brown.
- 5. Prepare garlic herb sauce by mixing hummus, lemon juice, dill, and garlic. Add water as needed to thin the sauce to a pourable consistency.
- 6. Serve sweet potatoes topped with chickpeas, sauce, and other optional toppings (parsley, cherry tomatoes, red onion, etc.). Enjoy!
