  • 2, 15 oz cans of chickpeas, drained
  • ½ cup plain, low-fat yogurt
  • ¼ cup lemon juice
  • 2 tbsp olive oil
  • 2 cloves garlic, chopped
  • 1 tsp cumin
  • ½ cup chopped sun dried tomatoes
  • ¼ cup sliced kalamata olives
  • 2 tbsp fresh cilantro

Instructions

  • 1. In a blender, combine chickpeas, yogurt, lemon juice, olive oil, garlic, and cumin. Blend until smooth.
  • 2. Stir in sun dried tomatoes, olives, and cilantro.
  • 3. Serve with vegetables or pita chips.
