Ingredients

Serves 4

  • 1 lb ground turkey
  • 2 cups cooked brown rice
  • 4 cups vegetables of choice (fresh or frozen)
  • 1 tbsp sesame oil
  • ½ tsp garlic powder
  • ½ tsp ground ginger
  • ¼ cup low sodium soy sauce
  • 2 tbsp water
  • 2 tbsp honey
  • 1.5 tbsp rice vinegar
  • 1 tbsp sriracha (optional)
  • 1 tsp cornstarch

Instructions

  • 1. Preheat oven to 425 degrees. Toss vegetables with sesame oil, garlic powder, and ground ginger. Spread vegetables evenly on a baking sheet and bake for 12-25 minutes or until vegetables are cooked thoroughly.
  • 2. Prepare the sauce: combine soy sauce, water, honey, rice vinegar, sriracha, cornstarch, and garlic powder in a small pot. Bring to a simmer and cook for 3-5 minutes until sauce thickens, stirring often. Remove from heat and set aside.
  • 3. Heat a large skillet over medium-high heat and sesame oil. Add ground turkey and cook until cooked through. Add salt, pepper, garlic powder, or ginger powder to taste for extra flavor.
  • 4. Once meat is cooked, assemble the bowls by placing cooked rice in a bowl and topping with meat and veggies. Drizzle sauce on top, stir to combine and enjoy!
