Ingredients

Serves 4

  • 1 lb cooked, shredded chicken
  • ½ cup plain greek yogurt (non-fat for a low fat option)
  • 1 tbsp fresh parsley
  • ½ cup celery, chopped finely
  • 1 cup apple, chopped finely
  • ¼ tsp garlic powder
  • ¼ tsp black pepper
  • ¼ tsp salt

Instructions

  • 1. Bring a large pot of water to a boil and cook chicken for 10-14 minutes. For a faster version of this recipe, store bought rotisserie chicken could be used.
  • 2. Shred chicken by pulling apart with 2 forks. Add chicken, parsley, celery, apple, garlic powder, pepper, and salt to a large bowl.
  • 3. Add greek yogurt and mix until all ingredients are thoroughly coated. Serve over a salad or on a sandwich.
