Greek Yogurt Chicken Salad

Ingredients
Serves 4
- 1 lb cooked, shredded chicken
- ½ cup plain greek yogurt (non-fat for a low fat option)
- 1 tbsp fresh parsley
- ½ cup celery, chopped finely
- 1 cup apple, chopped finely
- ¼ tsp garlic powder
- ¼ tsp black pepper
- ¼ tsp salt
Instructions
- 1. Bring a large pot of water to a boil and cook chicken for 10-14 minutes. For a faster version of this recipe, store bought rotisserie chicken could be used.
- 2. Shred chicken by pulling apart with 2 forks. Add chicken, parsley, celery, apple, garlic powder, pepper, and salt to a large bowl.
- 3. Add greek yogurt and mix until all ingredients are thoroughly coated. Serve over a salad or on a sandwich.
