Chicken Burrito Bowls

Serves 4
- 2 large chicken breast, cut into strips or cubes
- 2 tbsp avocado or olive oil
- 2 tbsp lime juice
- 1 tsp paprika
- 1 tsp cumin
- ½ tsp ground chili powder
- ½ tsp salt
- ½ tsp black pepper
- 1 cup corn
- 1 cup black beans
- 1 cup brown rice**
Suggested Toppings
- 1 avocado, diced
- ¼ cup sour cream or plain greek yogurt
- ½ tomato
- 1 cup romaine lettuce, chopped
- 1 tbsp cilantro
**for a lower carb option, swap traditional rice out for cauliflower rice!
Instructions
- 1. Add chicken breast pieces to a medium bowl and combine with oil, lime juice, paprika, cumin, chili powder, salt, and black pepper
- 2. Over medium-high heat, cook chicken in a non-stick pan for about 7-8 minutes on each side or until thoroughly cooked
- 3. Cook rice according to package instructions
- 4. Once cooked, add rice to a bowl and top with chicken, corn, beans, and other toppings of your choice. Enjoy!
