Ingredients

Serves 4

  • 2 large chicken breast, cut into strips or cubes
  • 2 tbsp avocado or olive oil
  • 2 tbsp lime juice
  • 1 tsp paprika
  • 1 tsp cumin
  • ½ tsp ground chili powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup corn
  • 1 cup black beans
  • 1 cup brown rice**

Suggested Toppings

  • 1 avocado, diced
  • ¼ cup sour cream or plain greek yogurt
  • ½ tomato
  • 1 cup romaine lettuce, chopped
  • 1 tbsp cilantro

**for a lower carb option, swap traditional rice out for cauliflower rice!

Instructions

  • 1. Add chicken breast pieces to a medium bowl and combine with oil, lime juice, paprika, cumin, chili powder, salt, and black pepper
  • 2. Over medium-high heat, cook chicken in a non-stick pan for about 7-8 minutes on each side or until thoroughly cooked
  • 3. Cook rice according to package instructions
  • 4. Once cooked, add rice to a bowl and top with chicken, corn, beans, and other toppings of your choice. Enjoy!
