  • 3 ripe bananas
  • 2 cups old fashioned rolled oats
  • ¾ cup milk of choice
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tbsp baking powder
  • ½ tsp ground cinnamon
  • ½ tsp kosher salt
  • ⅓ cup dark chocolate chips

Instructions

  • 1. Preheat oven to 350 and grease 12 cup muffin tray.
  • 2. Combine bananas, oats, milk, egg, vanilla, baking powder, cinnamon, and salt in a blender until oats are fully broken down.
  • 3. Once batter is smooth, carefully fold in chocolate chips.
  • 4. Evenly distribute batter between 12 muffin cups.
  • 5. Bake for 30-35 minutes or until center of muffin is set and edges are golden brown. Cool for 5-10 minutes and enjoy!
