Banana Oat Muffins

Ingredients
Serves 12
- 3 ripe bananas
- 2 cups old fashioned rolled oats
- ¾ cup milk of choice
- 1 egg
- 1 tsp vanilla extract
- 1 tbsp baking powder
- ½ tsp ground cinnamon
- ½ tsp kosher salt
- ⅓ cup dark chocolate chips
Instructions
- 1. Preheat oven to 350 and grease 12 cup muffin tray.
- 2. Combine bananas, oats, milk, egg, vanilla, baking powder, cinnamon, and salt in a blender until oats are fully broken down.
- 3. Once batter is smooth, carefully fold in chocolate chips.
- 4. Evenly distribute batter between 12 muffin cups.
- 5. Bake for 30-35 minutes or until center of muffin is set and edges are golden brown. Cool for 5-10 minutes and enjoy!
